Turkey Melt – Keeping On Point

This Turkey Melt is filled with melted cheese, turkey, spinach, red onion, and light mayonnaise.

It’s a filling and tasty sandwich that is also low in points.

I’ll show you everything I did to keep this sandwich low in points.

The Ingredients

Turkey: I used deli turkey meat for this recipe. Boar’s Head cracked pepper turkey is my favorite.

This sandwich would also be great for using up leftover turkey.

Bread: Aunt Millie’s Live Carb Smart is the low point bread I like to use. It’s only 1 point per slice.

You can use whatever type of low point bread you like, just make sure to check the points.

Cheese: I went with part-skim mozzarella cheese slices. It was only 2 points per slice and it melted perfectly.

Light Mayonnaise: I used light mayonnaise since it’s lower in points than regular. One tablespoon of light mayonnaise is only 1 point vs. 3 points for regular mayo.

Spinach: This helped to add a pop of color plus it has numerous health benefits.

Red onion: I like adding red onion because it adds flavor. I used a mandoline to cut the onion very thin so it wasn’t overwhelming.

Cooking spray: Instead of buttering the bread I sprayed my pan with cooking spray. You still get the same crispy bread but for 0 points.

How to Make a Turkey Melt

This sandwich is kind of like a gourmet grilled cheese. It only takes 5 minutes to get ready and a few minutes to cook.

The only prep work I had to do was to slice the red onions with my mandoline. If you don’t have a mandoline just be sure to slice the onions very thin.

Add the light mayonnaise to one side of the bread. Top it with a cheese slice, red onion, spinach, and turkey. Place the other piece of bread on the turkey.

Preheat a nonstick pan over medium heat. Spray the pan with cooking spray and add the sandwich. Cook it for 2-3 minutes on each side or until the bread is golden and crispy.

    oz.
    Boar’s Head cracked pepper turkey
  • 1
    slice
    part-skim mozzarella cheese
  • Red onion, thinly sliced
  • Baby spinach (approximately 6 leaves)
  • 1
    tablespoon
    light mayonnaise
  • Cooking spray

Instructions

  1. Add the light mayonnaise, cheese, red onion, spinach, and turkey to one piece of bread. Top it with the remaining slice of bread.

  2. Preheat a nonstick pan over medium heat. Spray with cooking spray and add the sandwich to the pan.

  3. Cook for 2-3 minutes on each side or until the cheese is melted and the bread is golden and crispy.
