Cucumber Tomato Salad – Keeping On Point

This delicious salad is filled with fresh ingredients!

It’s the perfect side dish for summer. Plus it’s easy to make and low in points.

The Ingredients

Cucumber: I bought an English cucumber. I like it better than a regular cucumber because it’s not as seedy so it won’t add extra water to the recipe.

You can use the cucumber as is or peel it. I did a partial peel so the green skin would add a pop of color.

Tomato: I used cherry tomatoes that I cut in half. You can use any type of tomatoes you have on hand, I would just remove the seeds so the salad doesn’t get soggy.

Onion: Red tomato is my go-to for this salad. It’s my favorite onion to use with cucumber and tomatoes.

Feta cheese: To keep it low in points I used reduced-fat feta cheese. I wanted this salad to have a Mediterranean vibe so this was the perfect cheese to use.

The dressing: A simple combination of olive oil, lemon juice, and red wine vinegar make up the dressing. I used the lemon juice and red wine vinegar to add an acidic flavor to the dish.

Oregano: This is a key ingredient in many Mediterranean dishes.

How to Make Cucumber Tomato Salad

Mix the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper in a small bowl.

Slice the cherry tomatoes in half and add them to a large mixing bowl.

Cut the cucumber into bite-size pieces and add them to the mixing bowl.

Add chopped red onion and feta cheese to the mixing bowl.

Pour the dressing over the chopped vegetables and mix together.

Serve immediately or cover and refrigerate until you are ready to eat it.

Ingredients

  • 1
    English cucumber, cut into bite-size pieces
  • 20
    oz.
    cherry tomatoes, cut in half
  • 1/2
    small onion, chopped
  • 1/2
    cup
    reduced-fat feta cheese

For the dressing:

  • 1 1/2
    tablespoons
    olive oil
  • 1
    tablespoon
    fresh lemon juice
  • 1
    teaspoon
    red wine vinegar
  • 1/2
    teaspoon
    oregano
  • 1/2
    teaspoon
    salt
  • 1/4
    teaspoon
    black pepper

Instructions

  1. Mix together the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper in a small bowl.

  2. Add the cucumber, cherry tomatoes, red onion, and feta cheese to a large mixing bowl.

  3. Pour the dressing over the vegetables and mix together.
