This Weight Watchers Frittata is simple to make: eggs are beaten with a little milk to make them fluffy, and then cooked with vegetables or other fillings, preferably in the oven. As expected, a recipe like this can serve as breakfast, dinner, or even lunch when paired with other sides.

The fillings are as varied as your tastes. You can use vegetables like onions, spinach, peppers, mushrooms, and zucchini, combined with other proteins, typically deli meats, to make a more complete dish. Here we use smoked turkey ham, but you could use sausages, cheeses, or even small pieces of cooked chicken.

  • 1 cup smoked turkey ham, sliced into strips (150 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 2 cups fresh spinach leaves (60 g)
  • 1/4 cup milk, low fat, (60 ml)
  • 7 eggs
  • Salt and pepper to taste

How To Make Weight Watchers Frittata:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when you need to bake the frittata.
  2. Prepare the Ingredients:
    • Slice the smoked turkey ham into thin strips.
    • Halve the cherry tomatoes.
    • Rinse the spinach leaves thoroughly and pat them dry with a paper towel.
  3. Cook the Turkey Ham: In a large skillet, heat 1 teaspoon of oil over medium heat. Add the sliced turkey ham and cook for about 3-4 minutes until it starts to brown and become slightly crispy.
  4. Add the Vegetables:
    • Add the halved cherry tomatoes to the skillet and cook for another 2 minutes until they begin to soften.
    • Add the spinach leaves, stirring occasionally, until they wilt, about 2 minutes.
  5. Prepare the Egg Mixture: In a large mixing bowl, crack the 7 eggs and whisk them together. Pour in the 1/4 cup of milk and continue to whisk until the mixture is smooth. Season with salt and pepper to taste.
  6. Combine the Ingredients: Add the cooked turkey ham, tomatoes, and spinach to the egg mixture. Stir gently to ensure an even distribution of ingredients.

Variations and Substitutions

As mentioned, there are dozens of variations to this recipe since you can make it very simple with just eggs and onions or add any type of vegetable such as scallions, bell peppers, zucchini, broccoli, spinach, kale, mushrooms, or even peas.

Regarding proteins, any lean cooked deli meat works well, such as ham or sausages. Of course, cheese goes wonderfully with it.

As for seasonings, I haven’t experimented much beyond salt and pepper, which suffice for me.
