Mexican Street Corn Salad – Keeping On Point

This Mexican Street Corn Salad has been lightened up but you would never know.

I love this recipe because it’s so full of flavor and easy to make.

Just a few simple changes helped to make this side dish low in points.

The Ingredients

Corn: You can use fresh, frozen, or canned. I used frozen corn that was thawed and it was delicious.

Cilantro: If you don’t like cilantro you could substitute it for parsley.

Red onion: This helps to add flavor and crunch. If you don’t have red onion you could use green onions.

Cheese: Typically Mexican Street Corn Salad is made with cotija cheese. I used queso fresco because it’s lower in points.

The dressing: I used light mayonnaise, fat free sour cream, fresh garlic, lime juice, cumin, smoked paprika, salt, and black pepper.

Using light mayonnaise and fat free sour cream helped to drastically reduce the points. Don’t worry though, the corn salad is still creamy and full of flavor.

How to Make Mexican Street Corn Salad

Add the light mayonnaise, fat free sour cream, minced garlic, lime juice, cumin, smoked paprika, salt, and black pepper to a mixing bowl. Stir until it is combined.

I used frozen corn that I let thaw completely. Add the corn to a large mixing bowl.

Break apart the queso fresco cheese, it will easily crumble. Add the cheese to the bowl with the corn.

Add the chopped red onion and cilantro to the the corn and cheese. Pour the dressing over it and stir to combine.

You can serve it right away or refrigerate until you’re ready.

Serving Suggestions

As I mentioned, this is a great side dish with chicken, steak, or fish.

If you need a dish to take to a backyard gathering this one is always a hit.

You can also serve it with tortilla chips as an appetizer.

It’s also a great topping for tacos. It adds so much flavor!

Yield: 6 servings

Ingredients

  • 24
    oz.
    sweet corn (I used frozen corn that I let thaw)
  • 1/2
    cup
    cilantro, chopped
  • 1/2
    cup
    red onion, chopped
  • 2
    oz.
    queso fresco, crumbled

For the dressing:

  • 1/4
    cup
    light mayonnaise
  • 1/4
    cup
    fat free sour cream
  • 1
    clove
    garlic, minced
  • Juice from 1/2 lime
  • 1/2
    teaspoon
    cumin
  • 1/2
    teaspoon
    smoked paprika (don’t use regular paprika)
  • 1/2
    teaspoon
    salt
  • 1/4
    teaspoon
    black pepper

Instructions

  1. Add the dressing ingredients to a bowl and stir to combine.

  2. Add the corn, cilantro, red onion, and queso fresco to a large mixing bowl.

  3. Pour the dressing over the corn mixture and stir to combine.

  4. You can serve it immediately or cover and refrigerate it.
