Honey Mustard Chicken & Potatoes (Ten Dollar Meal)

You can feed four people for only $10 with this delicious meal!

Not only is it budget friendly but it’s also Weight Watchers friendly.

I did my shopping at Kroger. They have a 1 pound pack of chicken breast for only $5. It’s a great deal.

The Ingredients

Boneless skinless chicken breast: This is perfect for a 0 point protein.

Honey mustard: I bought the Kroger brand honey mustard. It was only $1.25.

Petite Potatoes: I grabbed a 1 lb. bag of petite potatoes which was $3.99. You can get Yukon gold or red potatoes.

The total spent for this recipe was $10.24.

Some “pantry staples” I used were garlic powder, salt, and black pepper.

How to Make Honey Mustard Chicken

I added 1/4 cup of honey mustard to a large zip up bag. I also added 1 tablespoon water, garlic powder, salt, and pepper.

Add the chicken to the zip up bag and seal it closed. Massage to cover the chicken with the honey mustard.

Refrigerate the chicken for at least 1/2 hour. The longer it sits the more flavorful it will be.

You can bake or grill the chicken, I used a grill pan. I love to grill in the summer but the temperature has been in the 90’s so I wanted to stay indoors.

How long you cook the chicken will depend on the thickness of it. I cooked my chicken 5-6 minutes on each side.

I always use my digital meat thermometer when I make chicken. It’s the safest way to make sure the internal temperature is 165 degrees.

If you’re baking the chicken you want to heat the oven to 400 degrees F. Bake the chicken for 20-30 minutes, or until the internal temperature reaches 165 degrees.

Making the Potatoes

I used this air fryer potato recipe. It takes less time than baking the potatoes and it’s perfect if you’re trying to avoid turning on the oven.

The petite potatoes can also be baked. Simply clean the potatoes, cut each one into four pieces, then add your favorite seasonings. Bake at 400 degrees F for 30-40 minutes.

One serving of the potatoes is 2 points. One serving of the chicken is 1 point. That makes this a filling 3 point meal.

Ingredients

    lb.
    boneless, skinless chicken breast
  • 1/4
    cup
    honey mustard
  • 1
    tablespoon
    water
  • 1/4
    teaspoon
    garlic powder

    teaspoon
    salt

    teaspoon
    black pepper
  • 1
    lb.
    petite potatoes (This is the potato recipe I used)

Instructions

  1. Add the honey mustard, water, garlic powder, salt, and black pepper to a large zip up bag. Place the chicken in the bag, seal it closed, then massage until it is covered with the honey mustard.

  2. Refrigerate the chicken for at least 30 minutes.

Grilling the chicken:

  1. Cook the chicken for 5-6 minutes on each side or until the internal temperature reaches 165 degrees F.

Baking the chicken:

  1. Preheat the oven to 400 degrees F.

  2. Place the chicken in a baking pan and bake for 20-30 minutes, or until the internal temperature reaches 165 degrees F.
